Kecho's is an upscale Greek and Mediterranean restaurant in Ocean Beach looking for a pantry/line cook. We are looking for someone enthusiastic and outgoing with a friendly, can-do attitude. Candidates must be able to maintain professional demeanor at all times and be dedicated to providing a memorable experience to our guests. We are committed to excellent service and high quality and value.
Basic Functions:
The pantry/ line cook will become intimately familiar with all kitchen activities and be prepared to do them in a pinch. He/ She will be responsible for the daily preparation of food items in the pantry and hot line stations. As assistant to the Chef, the pantry/ line cook will help with menu planning, inventory, and managing of supplies. Essential Functions:
1. Sets up stations according to restaurant guidelines.
2. Prepares all food items as directed in a sanitary and timely manner.
3. Follows recipes, portion controls, and presentation specifications as set by the restaurant.
4. Order, restock all items as needed.
5. Cleans and maintains stations in practicing good safety, sanitation, organizational skills.
6. Has understanding and knowledge to properly use and maintain all equipment in station.
7. Assists with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.
8. Is the kitchen leader when Chef is not present.
9. Performs additional responsibilities, although not detailed, as requested by the Chef, or general manager at any time.
Qualifications
1. Previous line and prep cook experience.
2. Understanding of professional cooking and knife handling skills.
3. Understanding and knowledge of safety, sanitation and food handling procedures.
Skills/Aptitudes
1. Professional communications skills are required.
2. Ability to take direction.
3. Ability to be a strong leader and work in a team environment.
4. Ability to work calmly and effectively under pressure.
5. Must have problem solving abilities, be self-motivated, and organized.
6. Commitment to quality service, and food and beverage knowledge.
Working Conditions
1. This position will spend 100% of the time standing.
2. Occasional environmental exposures to cold, heat, and water.
3. The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly.
